Dhokla With A Twist: Schezwan Dhokla


  1. 1 bowl dhokla batter
  2. 1 tsp oil
  3. Salt to taste
  4. 1/2 pepper powder
  5. 1/2 tsp soy sauce
  6. 1 tbsp Schezwan sauce
  7. 1 onion sliced
  8. 1/2 small capsicum slice
  9. 1/2 tsp garlic crushed
  10. 1/4 cup cabbage sliced
  11. 1 tbsp carrot sliced
  12. 1/4 cup spring onion chopped
  13. Coriander leaves and spring onions for garnishing


  1. In a bowl mix batter and add salt as required.
  2. Heat some oil in a pan. Add crushed garlic and sauté for a minute. Add all the sliced vegetables.
  3. Add soy sauce and the Schezwan sauce. Sauté the vegetables for around 2 to 3 minutes.
  4. Add the chopped spring onions and keep it aside.
  5. Grease the dhokla plate and fill 1/4 of the plate with the batter.
  6. Partly steam the batter. Once steamed, and the top part of the batter has firmed well, then add the vegetables on the batter.
  7. Now fill the rest of the plate with remaining batter and sprinkle black pepper powder on top. Put the plate back into the steamer and steam the dhokla till it is done.
  8. Let the dhokla cool and then cut into shapes as desire.
  9. Garnish with coriander and spring onions and serve hot.
