Italian Pulao : A Burst Of Flavours!

Ingredients:-

  1. Cooked rice – 2 cups
  2. Eggplant cut in cubes – 1/2 cup
  3. Green pepper cubed – 1 tbsp
  4. Cubed onion – 1 tbsp
  5. Salt – to taste
  6. Tomato ketchup – 1tbsp
  7. Vegetable oil / oil – 2 tbsp
  8. Red chilli paste – 1 tsp
For garnishing :-
Grated cheese

Method :-

  1. Heat some oil or vegetable oil in a pan add onion, green pepper and saute well and then cook.
  2. Deep fry the eggplant cubes till they are crispy and golden brown.
  3. Add the fried eggplant to the sautéed mix and then mix well.
  4. Add tomato ketchup and some grated cheese and mix well.
  5. Add red chilli paste and simmer the mix for 5 minutes.
  6. Add cooked rice in this mixture and mix well.
  7. Garnish with grated cheese and serve hot.
