Layered Red And Green Gravy Rice With Fresh Vegetables!



1. Vegetable oil – 2 tbsp
2. Chopped onion – 1/2 cup
3. Chopped tomatoes – 1/2 cup
4. Chilli ginger garlic paste – 3 tbsp
5. Onion puree – 3 tbsp
6. Punjabi masala – 1/2 cup
7. Tomato puree – 1/2 cup
8. Turmeric powder and red chilli powder – 1 tsp each
9. Salt- to taste
10. Cut cottage cheese – 1/2 cup
11. Spinach paste – 1/2 cup
12. Cashew nuts – 1/2 cup
13. Finely chopped coriander – 1/2 cup
14. Prepared rice – 2 cups
15. Boiled cauliflower florets – 1/2 cup
16. Boiled peas – 1 tbsp
For tempering:-
Cumin seeds, bay leaf, cloves, asafoetida etc.
For garnishing:-
Cashew nuts


1. Heat some vegetable oil in a pan, add chopped onion and tomatoes and saute well.
2. Add chilli ginger garlic paste, saute for two minutes. Add turmeric powder, salt, Punjabi garam masala, red chilli powder and mix well.
3. Add spinach puree, chopped coriander and prepare a thick gravy.
4. Heat vegetable oil in another pan, add cumin seeds, bay leaf, cloves, asafoetida, tomato puree, onion puree, chilli ginger garlic paste and mix well.
5. Add cashew pieces, cottage cheese pieces, turmeric powder, red chilli powder, salt, Punjabi garam masala and mix well.
6. Grease a mould with vegetable oil, add cashew pieces, cottage cheese pieces, red gravy, sautéed onion and tomatoes, cauliflower florets, peas, cooked rice, green gravy, rice, red gravy, rice, press firmly.
7. Unmould the rice and the layers, garnish with chopped coriander, Cashew nuts and serve hot.
