Presenting Beetroot Basundi!


  1. Milk – 1 litre
  2. Sugar – 100 gm
  3. Chopped almonds and pistachios – as preferred
  4. Cardamom powder – 1 tsp
  5. Nutmeg powder – 1 tsp
  6. Saffron – 1 tbsp
  7. Grated beetroot – 1/2 cup
  8. Vegetable oil – 1 tbsp


  1. Heat some vegetable oil in a pan and add grated beetroot in it and saute well.
  2. In another pan heat milk and keep stirring so that the fat doesn’t stick to the surface.
  3. Once the milk begins to boil add sugar in it and stir until it dissolves.
  4. Add chopped almonds and pistachios, nutmeg powder, cardamon powder and sauted and grated beetroot.
  5. You can keep the beetroot grated or make a puree of the sautéed beetroot.
  6. Serve hot or chilled.
