Presenting Corn Noodles Kofta In Thai Red Curry!

Ingredients:-

For kofta
  1. Boiled corn kernels – 1 cup
  2. Boiled potatoes – 250 gm
  3. Finely chopped green chillies – 2
  4. Finely chopped coriander – 25 gm
  5. Cornflour – 3 tbsp
  6. Oil – 1 tbsp
  7. Salt and pepper – to taste
  8. Boiled noodles – 3/4 cup
  9. Grated carrots – 2 tbsp
  10. Chopped cabbage – 3 tbsp
  11. Chopped capsicum – 1 tbsp
  12. Soy sauce – 1 tsp
  13. Vinegar – 1 tsp
  14. Chilli ginger garlic paste – 1 tbsp
For Thai red curry:-
  1. Red curry paste (tomato, garlic, ginger, chilli puree) – 4 tbsp
  2. Cornflour – 1 tbsp
  3. Coconut milk – 1 cup
  4. Oil – 1 tbsp
  5. Soy sauce – 1/2 tsp
  6. Basil leaves – 10 – 15
  7. Baby corn – 1/2 cup
  8. Sliced eggplant – 1
  9. Cauliflower cut in Florets- 1/2 cup
  10. Sliced mushroom – 1/4 cup
  11. Salt – to taste

Method:-

For Kofta:-
  1. Grate boiled potatoes, add the seasoning in it and prepare medium sized balls of it and keep it aside.
  2. Heat some oil in a pan, add chopped vegetables, ginger garlic paste boiled noodles, salt, pepper, vinegar, soy sauce and stir well. The vegetables should be firm rather than completely cooked.
  3. Once the mixture of pan is ready, keep it aside to cool.
  4. Stuff this mixture in the potato balls and fry them golden brown and keep them aside.
For Thai red curry:-
  1. Mix Cornflour and coconut milk together.
  2. Heat some oil in a pan and then add red curry paste in it.
  3. Add vegetables, soy sauce, basil leaves in the coconut milk mixture and add it in the pan. Then boil it till the vegetables are boiled and cooked.
  4. Add salt in the coconut curry, and let it boil till it thickens.
  5. Add the prepared corn noodles kofta balls in it and serve hot.
