Presenting Savoury Handva Cupcake With Minty Curd Frosting!

Ingredients:-

  1. Rice – 1 cup
  2. Urad dal – 1/4 cup
  3. Chickpea flour – 1/4 cup
  4. Toor dal (yellow lentil) – 1/4 cup
  5. Curd – 4 cups
  6. Grated gourd – 1/4 cup
  7. Spinach – 1/4 cup
  8. Fenugreek- 1/4 cup
  9. Sprouts – 1/4 cup
  10. Crushed peas – 1/4 cup
  11. Chilli ginger garlic paste – 3 tsp
  12. Salt – to taste
  13. Cooking soda- 1/2 tsp
  14. Sugar – 2 tsp
  15. Oil, mustard seeds, asafoetida, sesame seeds- for tempering
For frosting:-
  1. Creamy curd
  2. Mint paste
  3. Chaat masala
  4. Lemon juice
  5. Salt

Method:-

  1. Soak rice and other lentils in water for 4 hours.
  2. Once done, mix them together and blend it in the blender by adding required amount of water.
  3. Add Curd and keep it aside for 6 to 7 hours.
  4. Add grated gourd, spinach, Fenugreek, sprouts, peas, chilli ginger garlic paste, salt, and mix well.
  5. Add cooking soda in it, and a little oil over it and pour this batter into greased cupcake mounds and steam in a steamer.
  6. For frosting, mix all the ingredients of frosting and spread it on the cupcakes and serve.
