Saturday Night Special : Jaipuri Pulao

Ingredients :-

  1. Vertically chopped carrot – 1/2 cup
  2. Chopped cauliflower – 8-10 pieces
  3. Chopped beans – 1/2 cup
  4. Vertically chopped onions – 2 tbsp
  5. Butter – 2 tbsp
  6. Green peas – 1/2 cup
  7. Basmati rice – 2 cups
  8. Bay leaf, cloves, Cardamom seeds, black pepper, cinnamon – for tadka  (tempering)
For garnishing :-
Cherries, grated cheese, chopped coriander.
For paste:-
  1. Cashew nuts – 2 tbsp
  2. Green chillies – 3
  3. Onion – 1
  4. Fresh cream – 2 tbsp
  5. Ginger – 1 tbsp
  6. Cardamom – 4 – 5

Method:-

  1. Put all the ingredients of the paste into a blender, add half cup of water and blend it well.
  2. Cook rice in such a way that every grain is separately cooked.
  3. Put all the vegetables except onions in boiling water and cook.
  4. Heat some butter in a pan, and add all the ingredients of tadka in it and cook for a minute.
  5. Add cashews and other dry fruits of your choice.
  6. Add the paste prepared in the blender and saute well.
  7. Add chopped onions, and saute.
  8. Add the boiled vegetables and mix well.
  9. Finally, add cooked rice and mix well but carefully so that the grains of the rice aren’t broken.
  10. In a oven proof pan, grease it with butter, add the prepared pulao in it, bake it for two minutes.
  11. Pour it in the plate after it is done. Garnish with finely chopped coriander, grated cheese and cherries.
