Savoury Spinach Cottage Cheese Pie!

Ingredients :-

For pie crust:-
  1. All purpose flour – 1 cup
  2. Salt – a pinch
  3. Baking powder – 1 tsp
  4. Oil (for mohun) – 1 tbsp
  5. Pizza seasoning – 2 tsp
  6. Black pepper powder – 1 tsp
  7. Curd – 2 tbsp
  8. Warm water – 3 tbsp
For stuffing:-
  1. Oil – 2 tsp
  2. Blanched spinach puree – 1/2 cup
  3. Grated cottage cheese – 2 tbsp
  4. Finely chopped mixed bell peppers – 1 tbsp
  5. Boiled corn kernels – 2 tbsp
  6. Grated cheese – 1 whole cube
  7. Salt – to taste
  8. Chilli ginger garlic paste – 1 tbsp
  9. Black pepper powder – 1 tsp
  10. Chilli flakes – 1 tsp
  11. Mixed herbs – 1 tsp
For garnishing
Mixed herbs, chilli flakes, black pepper powder.

Method:-

  1. In a bowl mix all purpose flour, oil, baking powder and mix well.
  2. Add all the seasonings, curd and knead it into a dough with the help of warm water.
  3. Heat some oil in a pan, add chilli ginger garlic paste, saute well, add the spinach puree and cook well.
  4. Add finely chopped mixed bell peppers, corn kernels, grated cottage cheese and mix well.
  5. Add salt, black pepper powder, mixed herbs, chilli flakes and mix well and let it cool.
  6. Make sure that the prepared stuffing is not liquid.
  7. From the prepared dough, roll out a roti, add stuffing after it has cooled down, add another roti over it and seal it from all the sides using water.
  8. With the help of a pizza cutter or knife, make cuts on the outer sealed part as if it is a sunflower.
  9. Coat them with chilli flakes, mixed herbs and black pepper powder.
  10. Grease a pan with some oil, put the coated pies in it and bake them in the oven at 150 degrees for about 15 to 17 minutes.
  11. The pies should be golden brown in color.
  12. Add some spring onions around the pies and serve it hot.
