Tasty And Healthy Mexican Salad!

Ingredients:-

1. Finely chopped tomatoes – 1 big tomato
2. Finely chopped capsicum – 1/4 cup
3. Finely chopped onion – 1/4 cup
4. Sweet corn kernels – 4 cups
5. Finely chopped garlic – 2 tbsp
6. Finely chopped red bell pepper
7. Olive oil – 1/3 cup
8. Finely chopped basil – 1/4 cup
9. Vinegar – 1 tsp
10. Lemon juice – 2 tbsp
11. Salt – to taste
12. Black pepper powder – as preferred

Method:-

1. Boiled corn kernels in salt water for 8 to 10 minutes. Strain the water once done and keep it aside to cool.
2. In a bowl mix corn kernels, onion, red and green bell peppers, tomato, garlic, basil, and mix well.
3. For preparing salad dressing, in a small bowl mix olive oil, vinegar, lemon juice, salt and pepper and mix well.
4. Pour this prepared salad dressing over the mix vegetables bowl, mix thoroughly and serve.
