The South Indian Twist : South Indian Pani Puri!



For masala
1. Mashed potatoes – 1/2 cup
2. Finely Chopped onion – 1
3. Finely chopped tomato – 1
4. Urad dal – 2 tsp
5. Mustard seeds and cumin seeds – 1 tsp
6. Curry leaves – 7-8 leaves
7. Salt – to taste
8. Turmeric powder – 1 tsp
9. Oil – 1 tbsp
10. Lemon juice – 1 tbsp
11. Finely chopped green chillies – 2
12. Sambhar masala – 2 tsp
13. Finely chopped coriander – 1 tbsp
For Rasam pani
14. Finely chopped onion – 3 tbsp
15. Fresh grated coconut – 2 tbsp
16. Powdered sesame seeds – 2 tbsp
17. Chilli garlic paste – 1 tbsp
18. Powdered peanuts – 1 tbsp
19. Garam Masala – 1 tsp
20. Dry mango powder – 1 tsp
21. Tamarind – 2 tsp
22. Jaggery – 1 tbsp
23. Sambhar masala – 1 tsp
24. Curry leaves, mustard seeds, cumin seeds and asafoetida – for tempering
25. Oil – 1 tbsp
26. Salt – to taste
27. Turmeric powder and chilli powder – 1 tsp each
28. Finely chopped coriander – 1 tbsp
For coconut water
29. Fresh coconut water – 2 cups
30. Chilli ginger paste – 2 tbsp
31. Spearmint coriander paste – 2 tbsp
32. Rock salt – 1 tsp
33. Salt – to taste
34. Lemon juice – 1 tbsp
35. Garlic paste – 2 tsp


For masala
1. Heat some oil in a pan, add mustard seeds, cumin seeds, salt, curry leaves, urad dal and saute well. Saute well.
2. Add chopped onions, tomato, green chilli and mix well.
3. Add salt, turmeric powder, sambar masala and mix well.
4. Add mashed potatoes, lemon juice and mix well.
5. Add freshly chopped coriander.
For Rasam
6. Soak tamarind in warm water.
7. Mix all the ingredients for tempering in a blender and blend it into a smooth paste.
8. Add one glass of water in it and keep it aside for an hour.
9. Strain the ingredients in a bowl.
10. Heat some oil in a pan and prepare tadka and saute well.
11. Add this prepared tadka to the bowl and mix well.
For coconut water
12. Mix all the ingredients in a bowl and keep it aside for an hour.
13. Strain the mixture into a bowl.
