Presenting Vegetable Cookies : Beetroot Carrot And Rose Cookies!

Ingredients:-

  1. Wholewheat flour – 1/2 cup
  2. Oats – 1/2 cup
  3. All purpose flour – 1/4 cup
  4. Beetroot – 1/2 medium
  5. Carrot – 1/2 medium
  6. Vegetable oil – 1/3 cup melted
  7. Powered sugar – 1/2 cup
  8. Cashew nuts – 1/4 cup
  9. Vinegar – 1/2 teaspoon
  10. Baking powder – 1 teaspoon
  11. Baking soda – 1/4 teaspoon
  12. Cocoa powder – 1 & 1/2 tablespoon
  13. White chocolate chips – 1/4 cup
  14. Rose essence/extract – 1 tsp

Method:-

  1. Wash and boil carrot and beetroot. After it has cooled down, then peel and grind into a smooth paste with 1 teaspoon vinegar.
  2. In a bowl mix whole wheat flour, all purpose flour, ground oats and cashew nuts, baking powder, soda and cocoa powder.
  3. Mix together vegetable oil and powdered sugar. Mix beetroot and carrot puree.
  4. Add rose extract and mix well.
  5. Add all the dry ingredients and choco chips and make a smooth dough.
  6. Prepare medium sized balls of the dough, sprinkle some choco chips over them.
  7. Preheat the oven at 180°. Grease a baking tray or line with parchment paper. Bake in the oven for 10 – 12 minutes or until the edges becomes crispy.
  8. Serve cookies once they have been cooled down.
