Wednesday Dinner : Stuffed Capsicum

Ingredients:-

1. Tricolor bell peppers  (red, yellow,  green) – 1 each
2. Onion paste – 1/2 cup
3. Chilli ginger garlic paste – 1 tbsp
4. Mashed potatoes – 1 cup
5. Boiled peas – 1/2 cup
6. Finely chopped boiled carrots – 2 tbsp
7. Boiled corn kernels – 1 tbsp
8. Grated cottage cheese – 1/2 cup
9. Punjabi masala – 2 tsp
10. Salt – to taste
11. Chilli powder – 2 tsp
12. Chopped onion – 1/2 cup
13. Oil – 3 tbsp

For gravy

14. Tomato puree – 1 cup
15. Onion puree – 1/2 cup
16. Salt – to taste
17. Chilli powder and black pepper powder – 1 tsp each
18. Garam masala – 1 tsp
19. Cornflour – 1 tbsp

For garnishing
Grated cheese

Method :-

1. Cut the stems of bell peppers, take the seeds out and par boil them.
2. Heat some oil in a pan, add onion paste, chilli ginger garlic paste and saute well.
3. Add mashed potatoes, peas, carrots, corn kernels, pepper and mix well.
4. Add salt, chilli powder, black pepper powder, and mix well.
5. Stuff this prepared stuffing in the par boiled bell peppers.
6. Heat some oil in a pan, add onion puree, tomato puree and cook for two minutes.
7. Add all the masala and mix well.
8. Prepare a thick gravy.
9. In a baking tray, put the stuffed bell peppers,, put grated cheese over it and then bake it in the oven at 175 degrees for 8 minutes.
10. In the absence of oven, you can also bake it in the non stick pan on low flame using a bit of oil.
